Ibu Wiwik's Tiramisu













Ibu Wiwik's Tiramisu

3 x 750g Mascarpone cheese
7 egg yolks
10 tbsp sugar
6 tsp rum (optional)
2 packs lady fingers
vanilla
cocoa powder
4 cups coffee ( 1 cup hot water + 2 tsp instant coffee)

Cream egg yolks, sugar and vanilla, for approximately 15 minutes.

Add in mascarpone cheese a little at a time until well incorporated.

Add rum to the mixture, if using.

Dip sponge fingers into the coffee and cover the base of the dish.

Spread mascarpone mixture on top of the sponge base. Continue with the layering with the remaining sponge fingers and the cream mixture.

Dust the final layer of mascarpone with cocoa powder and refrigerate before serving.
