Kuih Talam Nyonya

Bottom layer

3/4 cup sugar
2/3 cup rice flour
1 tsp flour
11/4 cup thin coconut milk
7 tbsp concentrated juice of pandan leaves

Heat cake tin in a steamer, but, keep it dry.
Dissolves sugar in pandan juice over low heat. Strain the syrup and leave it to cool.
Mix rice flour and plain flour in a bowl and gradually stir in the syrup.
Add the coconut milk and blend well.
Cook the batter over low heat, while stirring continuously.
Pour into prepared tin and steam for about 20 minutes or until it's set.

Top layer

1/2 cup rice flour
1 1/4 cups coconut milk
1/2 teaspoon salt

Mix rice flour, coconut milk and salt.
Strain into a saucepan and cook over low heat while stirring continuously.
Pour over the cooked bottom layer and steam for 15 minutes.
