Vietnamese Spicy Lemongrass Chicken

My sinus is acting up again. My face has puffed up and the dry weather is making my throat really sore.....just imagine me looking like the Empress Dowager with a rock chick voice...

I was desperate for a simple comfort food and found this recipe while surfing the net. It looked promising and was super happy with the result. I love its simplicity of taste and the heat induced by the lemongrass. The caramelised sugar, too, adds another dimension to the taste......


Vietnamese Spicy Lemongrass Chicken
Ga Kho Xa Ot

3 pcs chicken breast, cut into bite-size pieces
3 tbsp sugar
2 tbsp oil
3 tbsp fish sauce
3 lemongrass, crushed
2 tbsp vinegar
1 tbsp oyster sauce
3 Thai green chillies, sliced
1 small onion, finely chopped

In a pot, heat oil and add in sugar. Let the sugar dissolve into a dark caramel color; immediately stir in onions and chicken. After 4-5 minutes, add lemongrass and chillies

Reduce heat to low, add in the rest of the other ingredients, adding a little water, if necessary. Cover pot and braise at a low simmer until chicken is cooked through.

Adjust seasonings to taste and serve over rice and a side of steamed vegetables.
