Khaukswe Chicken

Found this Burmese recipe while browsing in the wonderful world of cyber food sites. I was intrigued with the variety of seeds used in this recipe that I felt that I must give it a go....

I am well and truly happy with the result. Taste wise is not much different from the Malay Ayam Golek, perhaps a bit more zingy...courtesy of those wonderful ingredients cilantro, lime and fish sauce.... 

Khaukswe Chicken

1.5 kg chicken

1/4 cup coconut milk
6 tbsp plain yoghurt
brown sugar
fish sauce

Ingredients to be finely grounded:

1 1/2 tsp cumin seeds
1 tsp black peppercorn
2 tbsp pumpkin seeds
2 tbsp sunflower seeds
2 tbsp sesame seeds
6 garlic cloves
2 red chillies
1 tsp turmeric powder
1 tsp paprika powder
2 tbsp tamarind paste
1 tsp shrimp paste

In a bowl, mix the grounded ingredients with yoghurt, coconut milk and season well with sugar, salt and fish sauce.

Transfer marinade to a large bowl. Add chicken and rub paste all over chicken.
Refrigerate for at least 3 hours.

When ready to cook, preheat oven to 180C.

Bake for about 35 minutes. Serve with Cilantro and Lime sauce


Cilantro and lime Sauce
Chopped fresh cilantro
zest of 4 limes
juice from 2 limes
finely chopped garlic (omit, unless you want to be a social outcast)
finely chopped green chillies
sugar and fish sauce, to taste

Combine all ingredients in a bowl. Add a little water, if necessary.
