Brunch at Liza's

Chef-extraordinaire, Kak Liza, treated us to a scrumptious brunch of Laksa Masak Terengganu Special (betoi dak ni?), choux pastry with creme anglaise and cherry cheesecake......

Liz Cheeze Whizz Cake

fit nicely on greased 23cm ramekin
Biscuit casing:
225gm digestive biscuits-crush in food processor
115gm butter -melted
3 tbsp caster sugar
mix them up and paste on ramekin bottom and sides, bake 175-180 deg 15 min and let cool in fridge 30 min - 1 hr

Cream Cheese Filling
175 Phil cream cheese
75 gm sugar
120 whipped cream
1 tbsp lemon juice
1 egg
cream the cream cheese, whipped cream n sugar until light n fluffy then add lemon juice n egg n mix to incorporate. Pour into chilled casing n bake at 175-180 deg C 20-25 min just to set. Keep in fridge overnight.

1 jar cherries/blueberries etc with syrup
2 tbsp corn flour mix with some water
1 tbsp butter
heat the syrup and corn flour mix to thicken then mix butter n the fruits...let cool, pour on the cake then serve immediately.
