|My ankle is giving me problems.....
I was not able to put any weight on the ball of my feet or suffer an excruciating pain. So for the better part of today, I have been tippy-toeing around the apartment, much to the delight the tenants of the apartment below us. For once, I'm glad we're still staying in this small place until of course I have to go down those dreaded stairs.
I scoured the larder and found some sachets of spices, sent to us many, many months ago by my mom. Good thing they have a long shelf-life. So, for dinner, I'm doing the tear-off sachet, dump everything in the pot kinda cooking.
Why didn't I do this more often?
500g beef , sliced
1 sachet Nasi Kandar Curry mix
1 tsp ginger paste
1 tsp garlic paste
1 large onion, finely chopped
1 canned stewed tomatoes
1 cup water
400ml coconut milk
Fried onions, for garnishing
Mix the curry mix with 1 cup water .
In a pot, with a little oil, fry onions, ginger and garlic until aromatic. Add in the curry paste and fry until thoroughly cooked through.
Add in the sliced beef and mix until the beef is well coated in spice.
Add in the stewed tomatoes and half of the coconut milk.
Let it simmer for about 15 minutes over medium flame until slightly reduce.
Add in the rest of coconut milk and leave it to gently simmer over low heat for another 20 minutes. Season to taste.
