Chicken Soup with Passata

The weather is turning.....

It's getting cooler and the rain came back with a vengeance after staying away for almost 3 weeks. I'm stuck at home with my faithful companions, the television and my Mac.

Nothing beat the blues better than a mug of soup. So, for dinner the family tucked into a warm bowl of soup for a meal. Pure laziness....oops, I meant to say Heaven...




Passata is made from ripe tomatoes that have been puréed and sieved to remove the skin and seeds. It's sold in jars and can be smooth or chunky depending on the level of sieving.


Chicken Soup with Passata
1 tbsp oil
1 onion, chopped
Carrots
Cauliflowers
Broccoli
1 cup cooked chicken, diced
2 liter water
2 tbsp chicken stock powder
1 cup passata ( you may substitute it with your favourite canned tomatoes)
salt and pepper


Heat oil in a stock pot and add onion. Fry for about 2 -3 minutes.

Add vegetables, chicken, stock, passata and water. Season with salt and pepper

Bring to boil. Serve hot with sprinkling of chopped spring onion.
