Peach Cobbler with Sour Cream Custard

The "vacation" is over......

After being in Copenhagen for 3 weeks, for the first time, I'm left on me own since Mr Dudwey is off to work starting today.
What mischief should I get up to.....well, nothing much since 3 weeks holidays means 3 weeks worth of mess. So, it was major cleaning-up operation and ironing. Not too bad as I managed to have it all cleared by noon.... enough for me to have a short siesta in front of the TV.





Peach Cobbler with Sour Cream Custard

1 ½ cups all-purpose flour
1 cup sugar, divided
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup cold butter or margarine
1 can sliced peaches, drained
1 teaspoon ground cinnamon

for the Sour Cream Custard topping;
2 egg yolks
1 cups sour cream
1 tablespoons sugar
1/4 teaspoon ground cinnamon


In a bowl, combine the flour, sugar ( leave some to sprinkle over the peaches), baking powder and salt; cut in butter until mixture resembles coarse crumbs. Press onto the bottom of a greased baking dish. Arrange peaches over crust. Combine cinnamon and remaining sugar; sprinkle over peaches. Bake at 180 C for 15 minutes.

Meanwhile, in another bowl, combine egg yolks and sour cream. Spread evenly over the baked peaches and crust. Combine sugar and cinnamon; sprinkle over top. Bake 30-35 minutes longer or until golden brown. Serve warm or cold.
