Chocolate Chips and Pineapple Cookies
2 oz butter or margarine, softened
2 oz shortening
1 cup packed light brown sugar
1 teaspoon vanilla extract
2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 can (8 oz.) crushed pineapple, drained
1 cup Chocolate chips
Heat oven to 170C.
Beat butter and shortening in large bowl until blended.
Add sugar, egg and vanilla; beat well.
Stir together flour, baking powder, baking soda and salt; add to butter mixture, beating until well blended.
Stir in pineapple and chocolate chips.
Drop by teaspoons onto ungreased cookie sheet.
Bake 10 to 12 minutes or until lightly browned.
Remove from cookie sheet to wire rack. Cool completely.
