Woke up at around 5 in the morning. Wasn't able to go back to sleep for some unknown reasons. Perhaps, there are just too many things swishing about in my mind....
After clearing the dishes from the dishwasher and a spot of kitchen clean up, I decided that what I needed to do to unwind was to bake meself a cake. Looking at some of the left-overs in the fridge, I concocted this recipe. The result is a very soft, moist, light and fluffy Banana Cake..... Man, can I be any more stoked!!
Muna's Own Banana Sour Cream Cake
1/2 cups butter
1 cup sugar
1 cup mashed bananas (from 3 over ripe bananas)
1 tsp vanilla extract
1cup sour cream
juice from 1/2 lemon and zest
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
2 cups flour
In bowl, cream butter with sugar. Beat in eggs one at a time
Add mashed bananas, vanilla and sour cream, lemon juice and zest.
Sift together flour, baking powder, soda, cinnamon and salt. Fold into the creamed mixture, stirring just to blend.
Bake at 180 C for 40 - 45 minutes or until cake is nicely browned.
Cool in pan on rack for 10 minutes.
