Salmon and Spinach Quiche

The weather was disappointingly bad after a run of sunshine days and clear blue sky...

The girls spent their day at the Experimentarium, a hands-on science centre, and later in the evening they had a date with Alice and her madcap escapades in Wonderland.

Salmon and Spinach Quiche

1 ready-made pie crust
250g salmon, cubed
250g frozen chopped spinach, thawed and squeezed dry
2 eggs, lightly beaten
1 cup grated Jarlsberg cheese and cheddar
1½ cups cream
salt and freshly ground pepper

Bake pie crust in a 9” deep dish pie pan according to package directions.
Whisk the eggs in a mixing bowl and stir in the cream and cheese. Season with black pepper; stir in the spinach. Arrange chunks of salmon in the pastry case. Pour over the custard and bake for 30 min until puffed and firm.
