Kiwi Cake




Kiwi Cake

2 cups flour
1 1/2 tsp baking powder
1 tsp baking soda
1/2 tsp cinnamon powder
1/2 tsp salt
125g butter
2 tbsp honey
1 cup sugar
4 kiwifruit, finely chopped
2 eggs
2 tbsp buttermilk



In a large mixing bowl, cream butter, honey and sugar until light and fluffy, about 5 minutes. Add eggs, one at a time, beating well after each addition. Stir in chopped kiwifruit.
Combine the flour, baking soda, baking powder, cinnamon powder and salt; add to the creamed mixture. Add in the buttermilk.
Bake at 160C for 40-45 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
