Egg Masala

Egg Masala

4 hard-boiled eggs
1 tsp chilli powder
1 tsp cumin powder
1 tsp coriander powder
1/2 tsp turmeric powder
1 tsp tamarind paste
1 onion, thinly sliced
1 tsp chopped ginger
1 canned chopped tomatoes
vegetable oil
salt and sugar
fresh coriander leaves

In a small bowl, mix together the chilli powder, turmeric, cumin, coriander, and water.
Heat oil in a frying pan. Add the onion and ginger. Fry until the onion is soft, then stir in the spice paste.
Add tamarind paste, water, tomatoes, sugar, and salt.
Cover and simmer gently for 10 minutes.
Stir in chopped coriander and check the seasoning. Lay the eggs in the sauce and gently heat through.
Serve immediately with boiled rice.
