Finally, the temperature reached the twenties and the high winds relented.... summer is near and I'm outta here!!!
Spent the good part of the day pottering around the garden.
Pottering is such a middle-aged term, one never potters in youth.... sigh....I'm showing my age even in my writing....
Profusion of blooms - purple and mauve geraniums, white creeping phlox, purple aquilegia flowers to name but a few....
Since most of my time was spent in the garden, dinner was a simple fare.
I noticed that my mint needed a trimming so I concocted this simple lamb recipe using mint and some frozen peas and phyllo pastry.
Lamb Mint Peas Spring Rolls
300g lamb, cubed
1 medium onion, diced
1 tsp chopped garlic
1 tsp minced ginger
100 ml vegetable stock
200 ml apple juice
handful of finely chopped mint
salt and black pepper
