Roasted Vegetables Sandwich

One of my favourite and easy to prepare vegetarian sandwich.





Roast some portobello mushrooms, tomatoes and asparagus spears with oil, balsamic vinegar, salt and pepper.





Toast some slices of bread, spread with some delicious pesto - I'm using my new found favourite spread, chilli jam.
Layer with your favourite cheese - feta is good, but I'm using a locally made cheese, made right here in my area and they're really nice and soft.
Top the sandwich with the roasted vegetables... and, hey presto! you've got a super-delicious and healthy lunch!
