Savoury Courgette Pancake

Savoury Courgette Pancake

1 medium courgette, grated
1/2 cup gram flour
1 tsp paprika
1 tsp ground coriander
1/2 tsp cayenne pepper
1/2 tsp turmeric powder
salt and freshly cracked black pepper

Grate the courgette into a bowl using the large grating side of a box grater.
Stir in the rest of the other ingredients and mix well to combine.

Using a large skillet, heat 1 tablespoon of oil over medium heat.

Drop heap spoonful of batter into the pan. I find using ice-cream scooper works best in this instance.

Cook the batter about 3 minutes on each side, until browned.
Serve hot with some homemade chutney on the side.

While having our breakfast, we were visited by a lone deer grazing in the tall grass at our backyard.
Beautiful it may be, but, if it gets into my garden, I may have a bigger problem on my hands....
