Homemade Fish Fingers with Lemon Mayonnaise

Homemade Fish Fingers with Lemon Mayonnaise

White fish fillets, skinned
3 tbsp freshly grated parmesan
1/4 tsp paprika
1/2 cup bread crumbs
1 egg, beaten
2 tbsp flour
2-3 tbsp oil
Lemon wedges, to serve

For the lemon mayonnaise:
2 tbsp mayonnaise
2 tbsp Greek yoghurt
1 tsp lemon juice

Cut the fish into fingers.
Next, put the bread crumbs, parmesan, paprika, and some seasoning into a bowl and mix well.
Pour the egg into a bowl and spread the flour out onto a separate plate.
Coat the fish pieces first in flour, then egg, and finally roll them into the breadcrumbs mixture.
Heat the oil in a large frying pan and cook the fish for 3-4 minutes, turning once until golden and cooked through.
Mix the lemon mayonnaise ingredients together in a small bowl.
Serve immediately with the fish and lemon wedges.
