Turkey Day

... not for them turkeys, it ain't!!

I have to admit, the family is not a fan of turkey meat. But since it's the season to eat turkey en masse, we thought, why resist - let's give in to the festive turkey eating time.
Instead of getting a whole turkey, a turkey leg would suffice, so we thought...

We ordered one of those award-winning bronze turkey boneless leg - so I was told by the kindly butcher - and it was a whopping 2 kg piece of meat.
Looks like we'll be having leftover tomorrow, and the next day, and the next day....

Simple Oven Roasted Turkey Leg

1 boneless turkey leg
2 tbsp maple syrup
black pepper
chilli flakes
olive oil

Rub the ingredients evenly over the turkey legs. Roll turkey and tie with butcher’s twine.
Leave it in a cool place for at least 3 hours, preferably overnight.

Transfer to a baking sheet.
Roast turkey on a 180C oven for about 1 1/2 hours.
Let it rest for 10 minutes before serving.

Sliced Turkey with maple roasted carrots and sprouts and lingonberry gravy.

Lamb Stew with Orzo

Lamb Stew with Orzo

500g lamb shoulder
2 shallots, thinly sliced
1 tsp dried oregano
1/8 tsp ground cinnamon
1/2 cinnamon sticks
250g can chopped tomatoes
2 cups vegetable stock
200g orzo
freshly grated parmigiano

Heat oven to 180C. 
Cut the lamb into chunks, then spread over an oven-proof casserole dish. 
Add the onions, oregano, cinnamon sticks and ground cinnamon and mix well. 
Bake, uncovered, for 45 minutes, stirring halfway.

Pour over the chopped tomatoes and stock, cover tightly, then return to the oven for 1½ hours, until the lamb is very tender.

Remove the cinnamon sticks, then stir in the orzo. Cover again, then cook for a further 20 minutes stirring halfway through. The orzo should be cooked and the sauce thickened. 

Sprinkle with grated parmigiano.

Festive Edinburgh

I was still sick as a dog.

MrD and Elsa felt that a visit to the German Christmas Market would do me some good.

On My Feet

It was a busy day today....

I had an early morning appointment with my podiatrist. I've been having persistent pain on both of my heels for quite a while now and it's getting to be a bit annoying.
The podiatrist recommended an acupuncture treatment for the pain; well, I can tell you that it was not the most pleasant of experience and not one I would repeat in the near future or any future whatsoever...

Once home, I started making another batch of pastries and macarons to add to some hamper gifts that I'll distribute to friends for the season.

Yeah... so, I was on my feet the whole day again and by evening the pain was getting unbearable.

I had my dinner lovingly prepared by Elsa and MrD (with me screaming instructions from the sofa on how to use the oven etc)
They made ciabatta with baked salmon in cream cheese and rocket salad in vinaigrette; and I must admit, it was scrumptious.
Thank you, my lovelies. Too bad I wasn't able to photographed their kitchen capers.

Wonder if there will be a repeat performance for dinner tomorrow??

Hmm...looks like my feet will take a little longer to get better.... wink,wink!!

Vegetable Dhalca

A great dish to use up all the left-overs by way of vegetables and half-opened canned beans in the fridge...

Vegetable Dhalca

1 shallot, thinly sliced

1 tsp chopped garlic  
1 small knob of ginger
3 star anise
4 pcs cloves 
1 cinnamon stick
4 pcs cardamoms 
2  tbsp curry powder
200g red lentil
1 cup chopped tomatoes
1 tsp black mustard seeds

1 carrot, cubed 
potatoes, diced
green peas
chick peas

Wash the lentils in cold water until the water runs clear (this is very important or the lentils will get scummy), put the lentils in a pot with water to cover and simmer covered until lentils tender.
Meanwhile, in a large saucepan, caramelize the shallot, sliced ginger, star anise, cloves, cinnamon stick and cardamon in vegetable oil.

Add the curry powder and garlic.
Stir in the tomatoes and reduce heat, allow the curry base to simmer until the lentils are ready.
When the lentils are tender, drain them and add to the curry along with all the vegetables. 
Simmer until the vegetables are cooked through.

A Long Walk to the Park

 Making the most of a beautiful day!!

After a long breakfast at a local deli, MrD and I decided to go for a long walk along the old Deeside railway line towards Duthie Park from Cults. The walk stretches 7 miles along some wooded areas and garden allotments.

It was a pleasant hour spent and gave us much needed exercise after the heavy breakfast.
Little did we realise at the time that we also have to spend another hour walking back to the car, with the dusk coming in and the weather getting chillier.
That'll teach me to keep better track of the time!!
