Coat chicken thighs with paprika, ground cumin, ground ginger, turmeric, cinnamon and freshly ground pepper.
Leave to marinade preferably overnight.
Arrange chicken pieces in a casserole dish.
Drizzle with a little olive oil and salt.
Add in pitted green olives, raisins, lemon zest and finely chopped garlic.
Pour in about a cup of unsweetened apple juice.
Bake in moderate oven for 40 minutes.

One of the good thing about living in the country is that I'm never truly alone....
Take this morning, for instance, I was accompanied by a pair of nervous ducks while doing my garden. Their initial anxiety ended when I cajoled them with some stale bread.
Gotta fattened 'em up .... methinks Peking Duck would be delish......
Other times, there will be some wild rabbits with their young'uns ... I've yet to capture them in photographs as they're extremely fast on their feet. Don't think rabbit will be in my menu... ever!
