Aberdeen International Fun Day ~ the set-up

Black clouds looming....
Gales force wind....
Not exactly a day you want to be out and about....

Setting up a tent during high winds can be hazardous to one's good nature....

All set to go....

The calm before the storm...

Prep Work

I have no excuse.....
I knew what I got myself into.....

I had to prepare and process 7 kg of chicken breast meat and 6 kg of beef,
skin countless numbers of onions and shallots,
prep pineapples, cucumber, chillies and more herbs and spices that I ever could imagine....

But, I was determined to have fun...

At the end of the day, I have made

Beef Rendang
Ayam Percik
Lamb Murtabak with Onion relish
Pinaepple Cucumber Salsa
and Iced ChocOrange Cupcakes

Mission accomplished, everything had been set aside for tomorrow....

Pilates Games & Potluck

Our pilates instructor organised a day of food, fun and games.....

The day started with a "gentle" workout....

all those pain were not without its reward....

fun and laughter during the game....

much as I wanted to lead my team to our doodling victory, I had to leave them to fend for themselves as I had a date with my most amazing and the nicest dentist ever.... well, that's another story for another time.....

High Winds and Ashes

Mother Nature is in her bad mood.....

We're experiencing gale-force winds up to 100 mph in some part of Scotland
and as if that's not bad enough, another equally unpronounceable Icelandic volcano, Grimsvotn began erupting on Saturday, repeating scenes from April 2010.

Thai-Inspired Chicken Curry Noodle

Thai-Inspired Chicken Curry Noodle

4 pcs boneless chicken thigh, diced
fish balls, quartered
fried tofu, quartered
1 cup chicken stock
2 cups water
3-5 kaffir lime leaves
2 lemongrass
2 tablespoons fish sauce
1 tablespoon thai chillie paste
1 cup coconut milk
lime juice
brown sugar

Pour half of the coconut milk into a large pot, over low to medium low heat. Add the chillie paste. Let it boil for 2 minutes.
Add chicken and the rest of the coconut milk, stock and water and the fish sauce.
Add the fish balls, tofu, kaffir lime leaves and lemongrass.Reduce the heat and let it simmer for about 10 minutes.

I served my curry with Mary's homemade egg noodles and some slivers of pineapple.... yumm!

I was not eating alone today....
MrD came back for lunch... somehow he seems to sense what's been simmering on the stove. I wonder if he has some telepathic connection to my kitchen!

Moroccan Preserved Lemons

When life gives you lemons......

Cut the lemons in half lengthwise, starting from the tip, but do not cut all the way.
Make another cut in a similar manner, so now the lemon is quartered.
Keep the lemon attached at the base.
Sprinkle salt all over the insides and outsides of the lemons.
Tightly pack the lemons in a container.
Let it sit at room temperature for a couple days.
Refrigerate for at least 3 weeks, until lemon rinds soften.

Martha's Farewell

I was invited to join in the chaotic craziness that was Martha's last shindig before she leaves Aberdeen to equally sunny Manila.
It was a day full of riotous laughter and good food....
