Quick & Easy Plum Tart


1 ready-rolled puff pastry
8 plums, pitted and thinly sliced

Frangipane:
100g butter
100g caster sugar
100g ground almond
1 egg
1 tsp vanilla extract








Preheat oven to 200C.

Cream the butter, sugar and the vanilla extract for about 5 minutes until pale and fluffy.
Gradually add the ground almonds and eggs. Set aside.


Roll out the puff pastry. 
Spread a thin layer of frangipane on top of the pastry. Arrange the plum slices on top of the frangipane.
Bake for 15-20 minutes until the filling is set. Serve hot or warm.
