Thai-style Seafood Salad

Another no-measurement required recipe...

Thai-style Seafood Salad

Rice vermicelli
Cellophane noodles
sweet baby tomatoes, quartered
spring onions, chopped
roasted cashewnuts, roughly crushed
fresh coriander (optional)

calamari, cut into 1-inch-thick rings, lightly poached
scallops, lightly poached 
shrimps, lightly poached
baby octopuses, lightly poached
raw salmon

for the dressing;
fish sauce
lime juice
zest from 1 lime
salt and sugar
red chilli, finely chopped
