Cock-a-leekie Soup




a Scottish winter warming soup for a gloomy day...




Cock-a-leekie Soup

4 chicken thighs portions
8 leeks, sliced and washed
2 chicken stock cube
10 prune, sliced
a dash of Worcestershire sauce 
salt and pepper


Put the chicken in a pan with more than enough water to cover and bring to the boil.
Reduce the heat to a gentle simmer.
With a ladle, skim off the white scum that comes to the surface. 
Cook for a further half an hour, then remove the chicken. Pull the flesh from the bones, shredding it slightly, and return to the pan.
Add the stock, leeks and the prunes to the soup, and season with salt and pepper.
Simmer for another hour and a half
Taste and add Worcestershire sauce and more salt and pepper if necessary.
