Phad Thai












Phad Thai

Flat rice noodles

Vegetable oil
4 spring onions, sliced
2 garlic cloves, minced
2 red chillies, sliced
1 chicken breast fillet, thinly sliced
8 peeled large prawns
2 eggs, beaten
juice of 1 lime
fish sauce
sugar
fresh beansprouts
fresh coriander
unsalted peanuts, roughly chopped

Soak noodles in boiling water for about 10 minutes, or according to the packet instructions.

Heat oil in a preheated wok, add the spring onions, garlic and chillies and stir-fry over a medium heat for about 1 -2  minutes. Add the chicken annd stir-fry over high heat until well cooked.

Add beaten eggs, prawns and noodles and stir-fry until the eggs have set and the prawns are heated through.
Add in the lime juice, fish sauce and sugar and the beansprout.

Transfer noodles into a warm serving dish and sprinkle with peanuts and chopped coriander leaves.
