Raspberry Bubblegum Cake

They say
Curiosity kills the cat
But
curiosity left this cat with a cement-coloured slab of cake...

It all started
while perusing the bountiful variety of cake recipes in the cyberworld
I came upon a recipe -
it had an ingredient that is uncommon to a cake
I was intrigued...

I must have inhaled some chemical of dubious origin that day
and started to experiment with flavours of all sort.

Well, nothing much I can say... the rest is history.

Anyways, long story short
the Family finds it delicious (once you pass the oddness of the hue)

It's one of those cakes that will definitely go down well with kids...

Raspberry Bubblegum Cake

3 oz raspberry-flavoured vegetarian powdered gelatin
1 1/4  cups granulated sugar
2 cups sifted flour
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
5 large eggs, slightly beaten
1 1/4 cups vegetable oil
3/4 cup raspberry puree
1 tbsp raspberry vinegar (you may substitute with lemon juice)
1 tsp vanilla extract

Preheat the oven to 160C fan.
Grease a 9-inch-round cake pan.
In a large mixing bowl, mix the gelatin, sugar, flour, salt, baking powder, and baking soda.
Stir to mix well.
In another bowl, combine the eggs, oil, vinegar and vanilla.
Mix the wet ingredients into the dry ingredients and mix well.
Spoon the batter into the cake pan.
Bake for 35 to 40 minutes.

Allow the cake to cool completely before topping it with whipped sweetened cream cheese.
