Sweet Potato Pie






Sweet Potato Pie

1 pound sweet potato (approx. 1 1/2 medium size potatoes)
4 oz butter
2/3 cup soft light brown sugar
1/2 cup yoghurt
a pinch of salt
2 eggs
1/2 tsp ground nutmeg
1/2 tsp ground cinnamon
1 tsp vanilla extract

1 baked shortcrust pie shell








    Boil sweet potato whole in skin for 40 to 50 minutes, or until done. Once cool,  remove the skin.
    Break apart sweet potato in a food processor. 
    Add the rest of the other ingredients and mix well. 
    Beat on medium speed until mixture is smooth. Pour filling into the pie crust.
    Bake at 175 C for 55 to 60 minutes, or until knife inserted in center comes out clean.
