Thai-style Crab Salad

An easy appetiser

Thai-style Crab Salad

2 medium-sized, dressed crabs in shell, remove the white crab meat and brown crab meat (350g)
100g mung bean noodles
grated zest of 1 lime
chopped fresh coriander
chopped fresh mint
1 mango, peeled and sliced into strips
1 lemongrass, trimmed and very finely sliced
¼ cucumber cut into thin batons
3 spring onion finely sliced
1 red chilli, finely sliced
1 tsp toasted sesame seeds
15g salted peanuts

For the dressing:

1 tbsp thai sweet chilli sauce
1 tsp light brown sugar
2 tsp fish sauce
1 tsp soy sauce
juice from 1 lime

Cook the noodles to the packets instructions then drain and leave to cool.
Meanwhile whisk together the dressing for the salad.
Finally dress the noodles, crab, mango, cucumber, spring onion, lemongrass, mint, coriander, lime zest and chilli then garnish with the peanuts and sesame seeds.
