Spicy Banana Chutney

I'm not one for throwing away food
especially when they can be turned into something so delicious.

These bananas have been sitting on the kitchen counter passed their best...
You know, those over-ripe brown, mottled ones that no one wants to eat.

Well, I am not going to turn them into bread, cake, muffin or pancake.
I decided instead, to make something savoury out of them
And I'm pretty pleased with the outcome.

Spicy Banana Chutney

 8 over-ripe bananas
1 green chillies, seeds removed
a handful raisins
1 medium onions, chopped
1 garlic cloves, finely chopped
1 tsp curry powder
1/2 tsp turmeric powder
4 cloves
fresh curry leaves
2 cups apple cider vinegar
1 cup honey

Cook everything, except the honey, together until soft and pulpy - about 1 hour.
Add the honey and cook until the vinegar is reduced.
Spoon into cooled, sterilised jar.
