Banana Choc-Cinnamon Muffins
350g self-raising flour
3/4 teaspoon salt
2 teaspoons ground cinnamon
1/2 teaspoon vanilla extract
70g unsalted butter, melted
400g mashed banana
100g chocolate chips
Preheat your oven to 170C.
In a large bowl, mix together the flour, salt, cinnamon and sugar until combined.
In a separate bowl, whisk together the egg, buttermilk, the melted butter and vanilla.
Pour the wet mixture into the dry mixture.
Using a wooden spoon, stir the batter until evenly combine. Add in the mashed banana and chocolate chips.
Line muffin trays with paper cases and spoon fill them until 2/3 full and sprinkle a little dermerera sugar and cinnamon over the tops.
Bake for 20 minutes.
