Minced Beef in Filo

A family favourite!

Minced Beef in Filo

for filling:
400g minced beef
1 large onion, diced
2 garlic cloves, minced
1 small knob of ginger, minced
a handful fresh coriander, chopped
a small pinch of sugar
salt and black pepper, to taste

Heat oil in a pan and gently sauté the onion, then add the lamb and brown all over, breaking it apart with a wooden spoon. Once the lamb is browned, stir in garlic, ginger and add 1/4 cup stock. Continue cooking over a medium to low heat for approx. 15 minutes until water has been absorbed, stir in coriander and season to taste.
With a slotted spoon, remove meat mixture and set aside to cool.

Place filo flat on a work surface.
Keep covered with a lightly damp tea towel while working to prevent it drying out.
Take 1 sheet of pastry and brush lightly with melted butter.
Top with another sheet and brush with butter.
Place beef filling along 1 long side of the pastry.
Roll pastry to enclose filling, then, coil the length of filo into a snail shape.
Place on a large oven tray, then brush with butter.
Repeat with remaining pastry, butter and filling.

We love having them hot with a side of pickled sweet onion
