Fruity Venison Stew with Stilton Scones

A great comfort food for a cold and wet day!

Fruity Venison Stew

2 carrots, chopped
1 onion, diced
3 celery sticks, chopped
vegetable oil, for frying
1 garlic clove, finely chopped
400g venison, cut into large chunks
2 tbsp plain flour, seasoned with salt and pepper
1 tbsp cranberry sauce
250ml unsweetened apple juice
250ml vegetable stock
2 thyme sprigs
1 bay leaf

Toss the meaty chunk in flour seasoned with salt and pepper until well coated

Heat a large pan on a high heat, add oil and fry your meat for 3 minutes to brown it. 
Set aside.

In a casserole pan, melt the butter then add the onion, celery and carrots, and cook for around 6 to 
8 minutes, or until softened and lightly browned. 
Add the garlic, thyme and bay leaf and cook for another 
2 minutes, stirring often. 
Add the apple juice and let it bubble for a minute, then add the stock. 
Return the meat to the pan, bring to the boil and reduce to a simmer. 
Place the casserole in a 130C oven and bake for a further 2 hours or until tender. 

Stir in the cranberry sauce. Check the seasoning before serving.

Stilton Scones

250g self-raising flour
40g butter
125g stilton cheese
3 tbsp chopped parsley
1 egg
5 tbsp milk
salt and pepper

Mix together the flour, salt and pepper  and rub in the butter. 

Stir in the cheese and then the milk and egg to get a soft dough.

Turn on to a floured work surface and knead very lightly. 

Pat out to a round 2cm thick. 
Use a 5cm cutter to stamp out rounds and place on the baking sheet. 
Lightly knead together the rest of the dough and stamp out more scones to use it all up.

Brush the tops of the scones with a little milk and topped with some chopped stilton.

Bake for 12-15 minutes in a 220 oven until well risen and golden. 
Cool on a wire rack.

      semua jenis cheese boleh digunakan, grated cheddar would be great!
