The basic bread dough I used to make the bread:
3 1/2 cups strong bread flour
2 tsp instant yeast
2 tbsp extra virgin olive oil
2 tsp salt
1 1/3 cups warm water
Mix the flour, salt and yeast in a large bowl.
Make a well in the centre, then add the oil and water, and mix well.
Tip onto a lightly floured work surface and knead.
Once the dough is satin-smooth, place it in a lightly oiled bowl.
Leave to rise for 2 hours until doubled
In a small bowl, mix together
extra virgin olive oil
finely minced garlic
chopped fresh thyme
Once the dough has doubled in size, punch down the dough.
Tear off small pieces of dough, coat each ball in the seasoned oil,
and place in the bottom of a bundt pan.
Repeat this process until you have one layer of dough balls.
Sprinkle some Parmesan cheese.
Continue layering all the dough balls and cheese.
Leave the dough to rise for a further 30 minutes.
Bake in 180C oven for 30 minutes.
