Baked Wild Salmon with Coconut Mango Salsa

A simple dish
using wild Alaskan sockeye salmon fillet


Preheat oven to 180C. 
Brush salmon on all sides with oil and sprinkle with pepper and salt. 
Place salmon skin-side down in a baking dish. 
Bake for 6 minutes.


To make the coconut mango salsa:
In a medium bowl, combine chopped mango, red chilli, thinly sliced shallots
chopped fresh coriander, coconut cream, fish sauce, lime juice and sugar.
Gently fold the ingredients together.
Serve the baked salmon with a generous portion of coconut mango salsa.
