Linguine with Grilled Chicken and Avocado Cilantro Pesto



I've yet to meet anyone who has an aversion towards pasta.
 
 My family in particular would often choose pasta over any other carbohydrate.
Which in turn makes my "cooking" life less complicated
All you need is a killer pesto recipe and you're sorted!
Found this one on Beyond Kimchee and it turned out to be a hit with the family!

For the pesto:
1/2 cup ground almonds
2 soft avocados, peeled and remove seed
1 bunch cilantro, roughly chopped
1 green chilli, seeded and finely chopped
zest and juice from 1 lime
1/4 cup extra virgin olive oil
1/2 cup grated Parmesan cheese
salt and black pepper, to taste

Put all ingredients into a food processor. 
Process until smooth and season.
 

For Grilled Chicken you'll need
Boneless and skinless chicken meat (I'm using thighs)
Rub the chicken with olive oil and season with salt and black pepper. 
Grill until cooked through, approx. 5 to 6 minutes per side.
