Seeing that Elsa will be off to uni soon
and this time round she won't have the food catered for her
at the student hall
I decided to start a new series of cheap, healthy and fast recipes
but most importantly they have to be super-easy for my Elsa
who's not known for her kitchen prowess.
It is aptly named "Grub At A Grab" ta daaa!!!
First up, Layered Mince
a 2 process meal that could easily be pimped up when feeling lucky
Process 1 - can be made ahead of time and kept in a plastic container until needed
Simply Versatile Mince
you will need:
a deep pan or a wok
1 tsp sunflower oil
1 large red onion, diced
400g mince lamb or beef
1 heap teaspoon ginger and garlic paste
2 tsp light soy sauce
2 tsp dark soy sauce
1 tsp ground black pepper
salt, to taste
a little sugar
Heat the oil in a pan and gently fry the onion for 5 minutes.
Add the mince and ginger garlic paste and fry until browned all over.
Stir in the light soy sauce and dark soy sauce.
Add a splash
of hot water and season.
Simmer gently for 15-20 minutes.
To make the Layered Mince
you will need:
a deep square-ish casserole dish
6 large eggs
cream crackers
salt and pepper, to taste
Preheat the oven to 200°C/fan180°C/gas 6
Lightly grease the casserole with a little oil.
In a large bowl, whisk the eggs and season with salt and pepper
Add the mince into the egg mixture
Arrange a layer of cream crackers in the casserole
Spoon the mince over the crackers, then layer over the remaining crackers.
Pour over the remaining eggy mixture on top of the crackers.
Bake for 30 minutes or until golden brown
Best serve with a side of salad (as if)

light soy sauce (Kikkoman Naturally Brewed) £ 2.00
sunflower oil (ASDA 3L) £2.96
Oh goody... soon Elsa will be the 'kitchen goddess' like he mommy :D
