Cranberries White Chocolate Cookies


Starting the new year on a sweet note!




Cranberries White Chocolate Cookies

150g butter
90g brown sugar
1 tsp Sicilian lemon extract
2 large eggs
200g walnuts (coarsely chopped)
200g self-raising flour
1/2 tsp bicarbonate of soda
1/2 tsp salt
150g dried cranberries
125g white chocolate chips


Preheat the oven to 190C.
Using an electric mixer, beat butter and sugar together in a 
medium mixing bowl until light and fluffy.
Add lemon extract and eggs, mixing well.
In a separate bowl, combine the walnuts, flour, baking soda and salt.
Add to the butter mixture gradually, mixing well after each addition.
Stir in the cranberries and white chocolate.

To bake, drop rounded teaspoonful of mixture ontu un-greased baking sheets
Bake for 8 - 10 minutes or until golden brown.
Cool on wire rack.
