Homemade Beef Chorizo

Homemade Beef Chorizo

2 tbsp vegetable oil
1 large shallot, finely diced
3 cloves garlic, finely chopped
1 tsp ground cumin
1 tsp sweet paprika
1 tsp smoked paprika
1/2 tsp cayenne pepper
1/3 cup apple cider vinegar
800g minced beef (not lean)
Salt and freshly ground black pepper

Heat oil in a small pan over medium heat. 
Add onion and cook until soft, about 5 minutes. 
Add garlic and cook for further minute. 
Add cumin, paprika, cayenne and cook for another minute. 
Add vinegar and cook until reduced by half, about 5 minutes.

Remove the mixture from heat. 
Transfer to a blender, add 1/4 cup cold water and blend until smooth. 
Pour into a bowl and leave it to cool.

Once cooled, add minced meat and mix to combine. 
Add in salt and  black pepper to taste. 
Refrigerate for 24 hours before cooking.
