Beef Kofta Rice

Keeping things relatively simple.

Mealtime is usually a simple one dish fare at our home.
We're not one for elaborate, fill-the-table-full-of-food kinda family.
Especially not now when it's just me and my husband at the dinner table.

An idea came to me one morning- cooking meat and rice in one pot.
It's not a new idea, I grant you
but this is my take on combining two of my favourite dishes - kofta and tomato rice
into one dish.
The result is sublime, if I do say so myself!

To make Beef Kofta

300g minced beef
1 small onion, finely chopped
1 garlic clove, finely chopped
1/2 tsp ground cumin
1/2 tsp nutmeg
1/2 tsp allspice
1/2 tsp cayenne pepper
1/2 tsp black pepper
1 tbsp fresh coriander, chopped
salt, to taste
1 tbsp vegetable oil, for frying

Put all ingredients in a bowl and mix well using your hand.
Shape the mixture into balls.
I'm using an ice-cream scooper - you don't have to, that's just how I roll
Press the mix to compress
Heat oil in a frying pan and sear the balls over high heat
They should be still quite rare on the inside
Lift out of the pan and set aside

Beef Kofta Rice

180g basmati rice (approx. 1 1/2 cup)
1 small onion, chopped
1 garlic clove, chopped
1 cinnamon stick
2 cardamom pods
250ml canned chopped tomatoes
100ml water
a handful raisins
salt, to taste
olive oil

Heat 2 tsp oil in a large pan
Add onion and cook over medium heat until lightly browned.
Add garlic, cinnamon, cardamom and fry until fragrant.
Add the tomatoes and rice.
Pour the water over the rice and let it simmer.
Arrange the koftas, cover the pan and cook over low heat undisturbed for 10 - 15 minutes.
Sprinkle with coriander in oil and roasted pine nuts before serving.
