Chicken & Leek Mash Pie

Here's my take on combining the flavours of Cock A Leekie and Shepherd's Pie.
Best pie I've eaten in a long time, if I do say so myself x

Chicken & Leek Mash Pie

4 chicken thighs, skinless and boneless
3 leeks
4 large brown mushrooms
1 clove garlic, crushed
1/4 cup chicken stock
2 tbsp flour

5 medium potatoes (Maris Piper), peeled and quartered
4 oz butter

salt and black pepper

Preheat oven to 190C
Cut the leeks in half lengthways and wash thoroughly.
Cut into dice.
Cut the mushrooms into cubes.
Dice the chicken to approximately thumbnail-sized pieces.

In the meantime, boil the potatoes in salted water until tender
then mash with the butter.
Season well

Melt butter in a heavy-based pan and add garlic and chicken.
Cook for about 4 -5 minutes.
Add in the mushrooms and leeks, cook for further 2 minutes
Check the seasoning.
Combine chicken stock and flour; mix well 
Slowly, add the mixture into the pan.
When the sauce has sufficiently thickened, remove from heat immediately.
Spoon the mixture into a pie dish and top with the mash.
Brown the pie in the oven for 15- 20 minutes
