Baked Pasta with Chicken Blue Cheese Spinach and Artichoke

A few years back, on our last trip to Kuala Lumpur
I was introduced to a rather delicious and extremely more-ish blue cheese-base dip 
by my three nephews.
It was one of their favourite dishes, I gathered.
So, as a reminder of that evening out with them, I recreated it as an all-in-one-dish.
Saves me from cleaning those extra dishes

Baked Pasta with Chicken Blue Cheese Spinach and Artichoke

6 boneless, skinless, chicken thighs
 Season chicken with salt and pepper and bake in a 180 C oven for 30 minutes.
Remove from oven and set aside for later.
12 oz dried pasta, cooked according to package directions
1 can artichoke hearts, drained and halved
1 pack frozen spinach, thawed and drained out water as much as possible
1 cup grated Parmesan, for topping

for the cheese sauce:
1 tablespoons extra-virgin olive oil
1 shallot, chopped
2 cloves garlic, finely chopped 
2 tablespoons butter
2 tablespoons flour
2 cups milk
1 cup vegetable stock
1 cup Gorgonzola cheese (you may use Stilton instead)
salt and ground black pepper

In a medium pan, heat olive oil and add the shallot and garlic.
Let it cook over gentle heat for about 1 -2 minutes.
Add in the butter, flour, milk and stock.
Using a balloon whisk, begin to whisk while bringing it to a gentle simmer.
Whisk continually until you have a smooth, glossy sauce,
and simmer very gently for 10 minutes.
Then add the cheeses and whisk again, allowing them to melt. 
Then season with salt and black pepper


To assemble:
Place the pasta into the bottom of the baking dish. 
Top with spinach.
Arrange baked chicken pieces and artichoke halves.
Spoon the cheese sauce on top and sprinkle over the Parmesan
Bake for 30 minutes.


  1. At one time, I never fancy blue cheese because of the smell, but apparently... since ToH suka sangat dengan all kinds of cheese, jadi dah terbiasa and boleh makan. This one looks temping...

    1. I takes a while for me to get use to the smell too... macam bau stokin busuk pun ada, macam bau durian pun ada juga.
      No wonder omputih pun dah mula gemar makan durian :D
