Chicken Stir-Fry in XO Sauce





I felt bad - like I've cheated since the sauce came in a jar.  
Came across the sauce whilst out shopping at a local Asian supermarket
and thought I should give it a try.
It's a savoury spicy sauce jam-packed with lots of flavour and a good kick 
whilst leaving a lingering hum on the tongue.
Definitely a keeper, the sauce is especially useful during one of my lazy days!

Fyi, XO stands for extra old...
and this product DOES NOT contain alcohol x

Master Ja Jan Vegetarian XO sauce
 

Chicken Stir-Fry in XO Sauce

600g boneless, skinless chicken thighs, cut into bite-size pieces
1 large handful snow peas
1 large handful fresh baby corn
1 tbsp XO sauce
1 tbsp oyster sauce
 1 tsp minced garlic
2 tsp light soy sauce
sugar
salt
2 stalks spring onion, for garnish
In a wok, heat a little oil from the XO sauce. (You will find the sauce is swimming in oil)
Add in the chicken pieces and stir-fry on high heat for 1 minute.
Add in minced garlic, XO sauce, light soy sauce and oyster sauce. 
Adjust seasoning. 
Add the vegetables and continue to stir-fry until chicken is cooked through.
Serve with steaming hot rice.
