Cardamom Cafe Latte Cake




  I love trying out local cafes and delis.

In our recent travel, I had a slice of coffee cake for tea in one fashionable-looking deli in town.
It was a small slice and a tad overprice but undoubtedly delicious.
So much so, I was craving for more.
Now, that I'm back in my kitchen I thought I'll make myself some...
Hopefully, no more cravings after this


Cardamom Cafe Latte Cake

For the streusel topping:
1/2 cup flour
1/2 cup coarsely chopped walnuts
1/3 cup sugar
1/2 tsp instant espresso powder
1/2 tsp ground cardamom
1/4 tsp salt 
  2 oz butter, cut into cubes

 To make the streusel;
using the tips of your fingers, rub together flour, sugar, coffee powder, 
cardamom, salt and cold butter until the mixture is crumbly 
and only pea-size pieces of butter remain. 
Stir in the chopped walnuts. 
Set aside in a cool place.


For the cake:
2 cups self-raising flour
  1 tsp baking powder
1/2 tsp salt
1 1/4 tsp ground cardamom
1 tsp instant espresso powder
2/3 cup sugar
    4 oz butter, melted and cooled
2 large eggs
1/2 cup whole milk
1/2 cup espresso, cooled
1 1/2 tsp vanilla extract

Heat oven to 180C.
To make the cake, whisk together the flour, baking powder, salt, 
cardamom, espresso powder and sugar in a large bowl.
Put the melted butter, eggs, milk, espresso and vanilla in a jug and mix to combine.
Slowly pour into the flour mixture and mix until all the ingredients are incorporated. 
Scrape the batter into the prepared pan. (I'm using an 8 inch square pan)
 Smooth over the top of the cake mixture with a spoon, 
then sprinkle over the streusel topping. 
Bake for about 35 - 40 minutes or until a skewer inserted into the cake comes out clean. 
Leave to cool in the tin for 10 minutes, 
then turn out onto a baking rack, remove paper and cool.
 

Speaking of cakes...
Nothing is more synonymously linked to cakes than birthdays.
This month, in fact this week alone, two very special people
are celebrating their 80th birthday!
