Chocolate Banana Layer Loaf


1 1/2 cup plain flour
2 oz dark chocolate, chopped
2 medium very ripe bananas
2/3 cup light brown sugar
1/4 cup vegetable oil
2 large eggs
1 1/2 tsp baking powder
1/2 tsp soda bicarbonate
1/2 tsp salt
1/2 cup buttermilk
1 tsp vanilla extract
 Preheat the oven to 170C. 
Lightly coat a 9-by-5-inch  loaf pan with oil.

Put the chocolate pieces in a bowl and melt it over another bowl of hot water,
making sure the bottom of the bowl of chocolate does not touch the hot water.
Set aside to cool slightly while preparing the cake mixture.

Combine the bananas and sugar in a large bowl and mash with a fork - I like mine slightly lumpy.
Add the oil and eggs and stir until combined. 
Mix in flour, baking powder, soda bicarbonate and salt. 
Stir in the buttermilk and vanilla.

Stir 1 cup batter into the melted chocolate. 
Fill the loaf pan with half the banana batter and then half the chocolate batter. 
Repeat the layer.
Bake until golden brown on top, about 45 minutes.
