It's summer, which means I have 3 months to learn how to cook -
otherwise, I'm stuck buying frozen food and pot noodles
like I've been doing for the past 2 years (I'm not proud).
This looked relatively easy to make, which is why I decided to go for it.

Thai-Style Salmon Wrap
1 tbsp Thai fish sauce
1 tbsp red curry paste
2 tbsp chopped fresh coriander
2 spring onions, finely sliced
pinch of dried chilli flakes
juice and zest of 1 lime
salt and sugar, to taste
Put all the ingredients, except the oil, in a food processor and blitz together.
Shape the mixture into small fish patties.
Arrange in a baking sheet and bake for about 8 minutes in a 170C oven.
Spicy Honey Sauce
2 tbsp runny honey
1 tbsp vinegar
1 small onion, finely chopped
2 tbsp tomato ketchup
1 tsp chopped fresh coriander
Thai fish sauce and sugar, to taste
Put the honey in a small pan with vinegar, onion and ketchup.
Bring to boil, then remove from the heat and leave to cool.
Add the chopped herbs.
To assemble the tortilla, get some tortilla wraps and and
spread mayonnaise and honey sauce down the middle.
Arrange the baked fish patties on top of the sauces and roll.
Cut it into smaller pieces (or you don't have to, you can keep it as a long roll -
don't let anyone tell you what to do, you are INDEPENDENT).
