Meatballs in Tomatoes with Roast Potatoes

A simple weekday supper
It's super delish and extremely more-ish
You have been warned!

Meatballs in Tomatoes

500g minced beef
salt and fresh ground black pepper
1 tbsp olive oil
1 can (400g) chopped tomatoes
1 tsp minced garlic
1 tsp dried chilli flakes 
1 tsp ground black pepper
brown sugar
150g labneh
Parmesan (optional)

Preheat the oven to 200C 
Combine the meat with salt and black pepper.
Shape the mince into small balls.

Toss the meatballs gently in a little oil and bake for 10 minutes.

Meanwhile, heat olive oil in a frying pan.
Add the tomatoes, garlic, chilli flakes and black pepper.
 Season with brown sugar and salt.

Arrange the baked meatballs in an ovenproof dish.
Spoon the tomato sauce over the meatballs.
Top with labneh and sprinkling of parmesan 
Bake for about 10 minutes

Serve with Roast Potatoes

Roast Potatoes

1 kg new potatoes, scrubbed and diced ( I'm using Duke of York) 
2 tbsp olive oil
sea salt
1 fresh chilli (more if you're feeling lucky!)
3 spring onions, chopped

Preheat the oven to 200C
Toss the potatoes with olive oil.
Place in a large baking tray and season with sea salt
Roast for 40 minutes, until golden and crispy.
Scatter chilli and spring onions and return to the oven
for another 2 minutes.
