Roti John Simplified

Champion breakfast
a little on the heavy side
but it's the weekend
live a little!

So I've heard about Roti John a lot
back when we were still in Malaysia
I must confess I had never tried eating them, let alone tried making any
But lately, I've been craving Roti John
funny 'cos you usually crave for something you know...
Anyways, this is how I made my Roti John 
(I find it extremely unfair that John gets the credit for this recipe when he did nothing!)

In a hot wok, fry 300g minced beef; no oil needed as oil will eventually ooze out of the meat.
Add to it minced garlic, black pepper, tomato ketchup, salt and a little sugar.
Set aside to cool.

To assemble, mix the required amount of mince to some lightly whisked eggs.
Butter some buns.

Heat some butter in a pan.
Place a spoonful of eggy-mince mixture into pan and place the bun (cut side down) over it
Let it cook a little, then turn the bun right side up, sprinkle some cheese 
and bung it in a grill oven for about 5 minutes.

To serve, sprinkle with some chopped spring onions and some *chilli mayo

*To make chilli mayo;  mix together mayonnaise with Malaysian style Chilli sauce, 
Sriracha sauce and lime juice
