It's the unnerving calm before the storm.
We're between two storms -
Yesterday, Grumpy Gertrude with wind gusts of up to 100mph in some places, 
left her unpleasant presence in some areas in Scotland. 
Fortunately, we managed to outrun her on our way back from Glasgow 
whilst she was brewing on the west coast of Scotland.
With Horrid Henry making land contact some time tomorrow (forecasted by the Met office),
and I'm not sure what devastation he would bring with him
more high winds and gales I suppose...

Anyhoo, like I mentioned before, today is a beautiful day
and I can't believe we're already one month into the new year!
I wonder if the animals even care ♡

Out and About - Glasgow Getaway

When it comes to traveling, I'm in two minds - whilst it's fun to get away and see new things,
it's always a chore to pack my bag - I always find that I packed too much but still not enough....(?)
 Also, it feels bad leaving the cat and the ducks behind.
Lolita's a lot grumpier (than usual) every time we came home from being away
and it took a good couple of days before she's back to her usual less grumpy state.

This time, though, it was a trip we've been waiting to make for the last 5 years.
Elsa flew down from Exeter to meet us in Glasgow airport for a "mini-reunion" 
After we concluded the "business" part of the trip, we decided to savour
the sights and sounds Glasgow has to offer....

Homemade Beef Chorizo

Homemade Beef Chorizo

2 tbsp vegetable oil
1 large shallot, finely diced
3 cloves garlic, finely chopped
1 tsp ground cumin
1 tsp sweet paprika
1 tsp smoked paprika
1/2 tsp cayenne pepper
1/3 cup apple cider vinegar
800g minced beef (not lean)
Salt and freshly ground black pepper

Heat oil in a small pan over medium heat. 
Add onion and cook until soft, about 5 minutes. 
Add garlic and cook for further minute. 
Add cumin, paprika, cayenne and cook for another minute. 
Add vinegar and cook until reduced by half, about 5 minutes.

Remove the mixture from heat. 
Transfer to a blender, add 1/4 cup cold water and blend until smooth. 
Pour into a bowl and leave it to cool.

Once cooled, add minced meat and mix to combine. 
Add in salt and  black pepper to taste. 
Refrigerate for 24 hours before cooking.
