Sour Cream Cake




Sour Cream Cake

4 oz butter
1 1/4 cup light brown sugar
3 eggs
1 tsp vanilla extract
2 cups dark chocolate chips
2 cups sour cream
3 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt

topping:
1/2 cup demerara  sugar
1/2 ground cinnamon
*Mix together


 Preheat oven to 170C

Cream butter and sugar until light and fluffy
Add the eggs one at a time, mixing well after each addition
Stir in vanilla extract and chocolate chips
Sift the flour baking powder, baking soda and salt into a separate bowl
Add a third of the flour to the butter mixture followed by half the sour cream
Repeat the process and finish with the remaining flour

Pour the mixture into the prepared baking dish
(I'm using 2 4in x 6in loaf tin)
Smooth over with palette knife
Sprinkle with sugar and cinnamon mixture
Bake for about 45 minutes or until a skewer inserted in the centre comes out clean

My Garden Updates - End of Season Colours


The air is getting chillier and chillier...
That was the topic of the morning as the zumba ladies gather.
Noticeably, everyone of us was sporting extra thick layers of clothing
It's inevitable, summer has left us and the days are getting shorter.

But all is not lost yet,
there are still some colours in the garden.
It is important to keep the garden going as long as I can.
There would have been more blooms if it's not for the after-dark visitors we keep getting.
Bambis and Thumpers are no longer cute when you are trying to keep a garden!
They're everywhere
It's almost impossible to keep them out
My heart sinks every time I check the flower beds
But that's how it is out here...
I can only persevere

Fluffy Buckwheat and Kefir Pancakes




Fluffy Buckwheat and Kefir Pancakes

3/4 cup self-raising flour
1/4 cup buckwheat flour
1/2 tsp baking powder
1/2 tsp baking soda
a pinch of salt
1 large egg
1/4 cup kefir
1 cup milk

Sift the flours, baking powder, baking soda and salt into a large bowl. 
In a separate bowl, lightly whisk together egg, kefir and milk.
Pour the milk mixture into the flour mixture and mix until the batter is just combined. 
Let the batter stand for at least 30 minutes.

Heat a large nonstick skillet over medium-low heat and add a knob of butter. 
 Once melted, add a ladle of batter.
Wait until the top of the pancake begins to bubble, then turn it over 
and cook until both sides are golden brown.
 Repeat until all the batter is finish.
  Serve warm with butter, maple syrup and fresh fruits

Out And About - Huntly


That is it for us this year
summer's over before we know it!
Summer this year has been a pretty washed out event.
It rained almost every other day.
meh!
So on this untypically sunny and cloudless day, 
we had to make the best of it by venturing into some unknown territory - 
well, not really... it's just a neat little town half an hour away from where we live.
A town called Huntly.
Funny how MrD and I had never made any effort to visit this town (it being quite close and all).
It was not until a friend of mine took me there for one of our walking day trips
that I became aware of this place.
It's a nice town, potentially...
It has beautiful, old and characteristic buildings.
It's obvious the town had a prosperous past...
