Oaty Pineapple Flapjacks

A few months ago I received a box of Urban Fruit samples to review for the blog.
They came in eight wonderful flavours,
packed in good size bags with funky artwork that would appeal to both kids and adults

Urban Fruit products are low in fat, high in fibre, gluten-free and sugar-free.
They're 100% natural with no artificial colours and preservatives
They're simply "Just Fruit Gently Baked"

After trying them out, I can honestly say that I liked them all.
But, my favourite, if I have to choose, would be
Smashing Strawberry
It's like having gummy-bears without the guilt
In fact, they taste better than gummy-bears!

Anyways, I thought I would try to use the product creatively
whilst maintaining the product healthy living ethos
So I came up with this recipe....

Oaty Pineapple Flapjacks

6 oz butter
12 oz blue agave syrup
6 oz porridge oats
4 oz oat bran
1 x 100g pack Urban Fruit Perfect Pineapple
2 oz pecan nuts, chopped
1 tsp ground cinnamon
1/4 tsp ground nutmeg
a pinch of salt

Preheat the oven to 150C.
 Grease and line an 8in square baking tin with parchment paper.
Melt the butter in a medium pan over a low heat. 
 Add the agave syrup to the butter and heat gently. 
Add the pineapple pieces and gently simmer until the dried fruits softened.
Add the cinnamon, nutmeg and salt.
Stir in the porridge oats, oat bran and chopped pecan.
Remove the pan from the heat.
Pack the mixture into the baking tin. 
Bake in the oven for 40 minutes.
Once cooked, remove from the oven, leave to cool for 15 minutes, 
then turn out on to a chopping board and cut into squares.
