Sweet Potato and Minced Beef Croquettes in Tomato Sauce



Necessity beckons originality
or should I say
my hunger pangs resulted in
a moment of inspired culinary genius (or madness)
Hey, don't judge...
it's winter, it's cold and I was hangry
 

Sweet Potato and Minced Beef Croquettes in Tomato Sauce

2 sweet potatoes
1 tbsp plain flour
salt
polenta, for dredging the croquettes
vegetable oil, for deep frying
grated cheese
 
 200g minced beef
1 clove garlic, finely minced
1 small knob of ginger, minced
1 medium onion, chopped
1 tbsp soy sauce
1/2 tsp sugar
salt and ground black pepper

Tomato Sauce:
1 can stewed tomatoes
1 clove garlic, minced
1 medium onion, finely chopped 
1/2 cup unsweetened apple juice
1 tbsp olive oil
salt, sugar and ground black pepper 
 
 

In large pan of salted water, boil sweet potatoes on high. 
Reduce heat to maintain simmer; cook for 10 minutes or until tender. 
Drain well.

Whilst the potatoes are simmering, heat 1 tsp oil in a frying pan.
Add the onion and fry until they start to soften. 
Add the garlic, ginger and beef and fry, 
stirring with a wooden spoon to break up mince, until browned.
Add soy sauce, sugar and seasonings.
Cook for further 1 minute.  
Remove from heat and leave it to cool.
 
In a bowl, mix together cooled mashed sweet potatoes 
with flour, salt and pepper.
Take a heaping tablespoon of the sweet potatoes,
 shape into a ball and flattened.
 Add a teaspoonful of minced beef mixture into the center. 
 Close and shape it into a croquette. 
Repeat the process with remaining ingredients. 
Once done, refrigerated the croquettes for a couple of hours.
Dredge the croquettes in polenta before deep frying.
 
 
To make the tomato sauce:
In a food processor place tomatoes and garlic. 
Blend until smooth.
In a skillet over medium heat saute the finely chopped onion in olive oil for 2 minutes. 
Add the blended tomato sauce and apple juice.
Simmer for 30 minutes, stirring occasionally.
Add salt, ground pepper and sugar, to taste.
 

Arrange the croquettes in the tomato sauce
and sprinkle with some grated cheese.
Place in the 180C oven for about 15 minutes
just enough for the cheese to melt
